Hallelujah! This New Study Says Eating Cheese Is Good For You

I present you with the most legend-dairy “would you rather”: would you rather give up oral sex or every type of cheese? Before you answer, let me remind you that if you chose the latter, that means no pizza, macaroni and cheese, grilled cheese, cheese sticks, mozzarella sticks, and so on. If you are among the majority and you have a love affair with cheese, then you are in luck. Three new studies have come out with evidence that we should all eat a lot more cheese.

The first study, from Sweden, found that people who ate at least eight full fat (!!!) servings of dairy per day had a 23 percent lower risk of getting type 2 diabetes than people who ate one or fewer servings of full fat dairy per day. At this point in our lives, most of us aren’t thinking about preventing type 2 diabetes, but now I have no reason to deny myself a fat piece of pizza, that delectable queso, or some classic Bosco Sticks–I’m going to milk this for all it’s worth. Even though we have all been led to believe that low fat dairy is the only way, researchers have found there is no association between diet dairy products and disease risks. Hell. Yes.

The second is a Chinese study of 4,000 adults, claiming that those who ate three to seven servings of dairy per week versus no dairy had lower blood pressure, lower body mass index, less body fat, and longer lives. This study didn’t differentiate from low and high fat dairy foods. So, essentially, we will still reap the benefits from the light yogurt and skim milk we were raised on. The thought of going cold turkey on skim gives me the heebie-cheesies.

The final study, which will probably make you have a cow, is a new clinical study of 233 healthy, French-Canadian adults. Researchers found that eating two and a half servings of a mix of high and low fat dairy, per day, may be associated with lower blood pressure and blood sugar. These two factors link to a lower risk of obesity, which is definitely the outcome we give the most fucks about.

I don’t know about you, but my mouth won’t stop watering and there is drool all over myself, because the only thing on my mind right now is cheese. Now that we know dairy may not only help us live longer but also lower the risk of type 2 diabetes, the only thing left to do is whip up a grilled cheese, nom on some easy mac, or, if you’re feeling domestic, make my gooey cheese sticks (recipe below).

Here is my favorite cheese recipe that literally anyone can make. Thanks, Grandma.

Ingredients:
16 mozzarella string cheese sticks, chopped in half
1 tablespoon olive oil
½ cup flour
¼ cup corn starch
2 eggs
2 cups plain breadcrumbs
Ranch and/or marinara for serving

Directions:
1. Preheat oven to 425 degrees. Line baking sheet with foil and brush olive oil onto foil.
2. Freeze the string cheese until hard (takes about 30 minutes to an hour).
3. While the cheese is freezing, combine the flour with the corn starch in one bowl, whip the eggs in a second bowl, and put the plain breadcrumbs in a third bowl.
4. Once the cheese sticks are frozen, make an assembly line to coat the cheese sticks. First, dip the cheese stick into the bowl of flour, then dip it into the egg mixture, and finish it off by dipping it into the plain breadcrumbs. Make sure when dipping to cover every side.
5. Once the cheese sticks are dipped and coated, place in a single layer on the prepared baking sheet. Freeze sticks again for about 15 minutes. (This will keep the cheese from melting too fast in the oven).
6. Bake cheese sticks for 5 to 8 minutes, then flip cheese sticks to the other side and bake another 5 to 8 minutes until golden and crispy. Allow to cool slightly.
7. Serve with ranch or marinara and devour.
